Yes my dear blog that started out as a weight loss blog turned into a family/life blog turned into an almost gave up blog is now also going to be a recipe/ family/ life/ not on a diet right now/ may be on a diet tomorrow/ you get what you get blog. As for the recipes they will not be just fattening recipes, not just healthy recipes but to keep up with the theme here it will be recipes that I love or test out and have no rhyme or reason for categorizing together. Hope that sounds good!
To start things off I want to share with you a Coca-Cola Cake recipe. It is one that I have wanted to try for quite some time. There are rave reviews on this cake (I swear) so it's about time we give it a try.
Just a warning I am probably not your typical baker. I read the recipe, look in the cupboard, find what ingredients I do have on hand, leave out what I can get away with and wha-la I bake. BUT I do have a few rules and things I like. My decisions are based first on taste and second on what is available where I live. For this recipe I used the bottled coke. I always use Wheat Montana all-purpose flour, vanilla EXTRACT and UNSALTED butter. Cocoa, I figure anything a step up from your basic hersheys is going to taste better. Cocoa is probably the hardest thing to find locally that is better quality. Pecans I love to get all my nuts pre-chopped, basically because I am a tad bit lazy.
First preheat oven to 350
In a bowl mix together
2 cups flour
2 cups sugar
1/2 tsp salt
1 tsp baking soda
1/2 tsp cinnamon
1 cup butter
1/4 cup unsweetened cocoa powder
1 cup coca-cola
1/2 cup buttermilk
Take off of heat and whisk into the flour mixture.
2 eggs
1 tsp. vanilla extract
Mix well
I baked this in a 10" round pan for 35 minutes but you can bake it in a 9x13 rectangle for 30 minutes. Personally I just love round cakes.
Oh and I LOVE Bakers Joy cooking spray for cakes. So easy!! Make sure you grease and flour your cake pan or be cool like me and buy yourself a can of Bakers Joy already!
Make sure you do not over bake.
To avoid over baking on new recipes I always do the first tooth pick test about 5 minutes before the recipe calls for it to be done. Your cake is done when the tooth pick comes out clean.
When the cake has about 10 minutes left to bake, mix the following in a saucepan:
*Glaze recipe
1/2cup butter
1/4 cup unsweetened cocoa powder
1/2 cup coca cola
Bring it to a boil and remove from heat.
Slowly whisk in 4 cups of powdered sugar until smooth
then add 1 cup of chopped pecans.
Pour the glaze directly over the hot cake.
Things I liked... No mixer! Easy to make. It is meant to be a little messy so looks do not matter and it can be made quickly.
Things I wondered about... Where is the coke? I can't taste it! Maybe I was wanting a coke float or something but I did expect it to have a much stronger coke flavor than it did. Next time I make it I will also leave out the pecans, just for personal preference.
All in all it was mighty tasty! I suggest serving it warm with ice cream or whip topping.
